B-R-O-C-C-O-L-I

I'm making lots of it!
Steamed broccoli.  Roasted Broccoli.  Broccoli with cheese.  BROCCOLI!!!!

Anyway, I'm whipping up a few things to have for the rest of the week.  Spaghetti Squash and Meatballs is in the crockpot at the moment and smells AMAZING.  I didn't know they made organic pasta sauce, but they do!














I'm also making these Broccoli Bites- they just came out of the oven and are delicious.  Almost chicken nugget-esque.  USE FRESH ORGANIC BROCCOLI, by the way.  Just, please.  And instead of using the italian breadcrumbs the recipe suggested (non-paleo), I used 1/2 cup of almond flour to give it a little more texture.  Not entirely sure how much that did though because the 3 eggs gave it more egg/less bread texture.  Does not change the five stars my tastebuds just gave this recipe.  I made them in muffin liners because (without the breadcrumbs) they were too runny.  I almost ate the muffin liner; they're that good.  I also like that they're more neutral ground- I could totally have these for breakfast!
